Cook Time: 35 minutes
Total Time: 50 minutes
Ingredients
- 1 1/2 cups (190g) all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 3/4 cup (150g) granulated sugar
- 1/2 cup (120ml) fresh orange juice (about 2 oranges)
- Zest of 1 orange
- 1/2 cup (120ml) vegetable oil (or melted butter for a richer version)
- 1/4 cup (60ml) milk
- 1 teaspoon vanilla extract
Optional Glaze
- 1 cup (120g) powdered sugar
- 2–3 tablespoons fresh orange juice
Instructions
- Preheat & Prep:
Preheat your oven to 350°F (180°C). Grease and flour a 9-inch (23cm) round cake pan or line it with parchment paper. - Dry Ingredients:
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. - Wet Ingredients:
In a large bowl, beat the eggs and sugar until light and fluffy (about 2–3 minutes). Add the orange juice, orange zest, oil, milk, and vanilla extract. Mix until combined. - Combine & Mix:
Gradually add the dry ingredients to the wet ingredients. Mix gently until just combined—don’t overmix, or your cake will lose its fluffiness! - Bake:
Pour the batter into the prepared cake pan. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean. - Cool & Glaze (Optional):
Let the cake cool for 10 minutes in the pan before transferring it to a wire rack. If you’re glazing, whisk the powdered sugar and orange juice together and drizzle over the cooled cake.
Do’s and Don’ts
DO:
- Use fresh orange juice for the best flavor—trust me, it makes a difference!
- Serve with a dollop of whipped cream or a sprinkle of powdered sugar.
DON’T:
- Skip the orange zest. That’s where all the magic citrus aroma hides.
- Open the oven too soon, or your cake might sink in the middle.
Pro Tip:
If you want an extra boost of orange flavor, brush the cake with a little warmed orange marmalade before glazing.
This Super Soft Orange Cake is light, airy, and bursting with citrus goodness. Perfect for breakfast, tea time, or just because you deserve cake.
