Ingredients

  • 1 1/2 cups (190g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (120ml) fresh orange juice (about 2 oranges)
  • Zest of 1 orange
  • 1/2 cup (120ml) vegetable oil (or melted butter for a richer version)
  • 1/4 cup (60ml) milk
  • 1 teaspoon vanilla extract

Optional Glaze

  • 1 cup (120g) powdered sugar
  • 2–3 tablespoons fresh orange juice

Instructions

  1. Preheat & Prep:
    Preheat your oven to 350°F (180°C). Grease and flour a 9-inch (23cm) round cake pan or line it with parchment paper.
  2. Dry Ingredients:
    In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Wet Ingredients:
    In a large bowl, beat the eggs and sugar until light and fluffy (about 2–3 minutes). Add the orange juice, orange zest, oil, milk, and vanilla extract. Mix until combined.
  4. Combine & Mix:
    Gradually add the dry ingredients to the wet ingredients. Mix gently until just combined—don’t overmix, or your cake will lose its fluffiness!
  5. Bake:
    Pour the batter into the prepared cake pan. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool & Glaze (Optional):
    Let the cake cool for 10 minutes in the pan before transferring it to a wire rack. If you’re glazing, whisk the powdered sugar and orange juice together and drizzle over the cooled cake.
